Preheat your oven to 220°C/200°C fan/gas mark 7.
Halve the avocado and remove the pit. Use a tablespoon to scoop out the flesh into a bowl. Mash with a fork. Season with salt and pepper.
Quarter the lemon.
Season the smashed avocado to taste with salt, pepper and a squeeze of lemon juice.
Mix well and set aside.

TIP: To avoid turning on the oven, toast the bread in the toaster instead.

Chop the cheese into thin slices. Drain the grilling cheese then cut into thin slices (3 per person). Add to a bowl of cold water. Then, remove the cheese slices from the cold water and pat dry with kitchen paper.

Place a pan (preferably non-stick) over medium-high heat with a drizzle of oil.

Once hot, fry until golden, 2-3 mins each side. Cover and set aside.

TIP: For an optional egg, place a pan over medium-high heat with a drizzle of oil. Crack in your egg (1 per person) and fry until the white is cooked and the yolk is your desired firmness, 4-5 mins. Adjust heat as needed.

  • Meanwhile, add the sugar and cinnamon to a bowl. Mix together until well combined. 
  • Return the pan to a medium-high heat with a knob of butter.
  • Once hot, add 2 tbsp of batter to the pan (or 1 tbsp for smaller pancakes).
  • Cook until bubbles start to appear on the surface, then turn and cook for another 1-2 mins.
  • Repeat until there is no more batter left.
  • When all is ready, pop the buns into the oven to warm through, 2-3 mins.

  • Spread the Ballymaloe relish evenly over the bun base.
  • Top with the avocado and cheese slices
  • If you've made one, add your optional egg. Sandwich closed with the bun lid.
  • Serve the pancakes alongside with a sprinkle of cinnamon sugar and squeeze of lemon juice. Serve any remaining lemon quarters by the side.
