Bash or roughly chop the hazelnuts. Place a small pot over medium heat (no oil). Once hot, dry-fry the hazelnuts until toasted, stirring regularly, 2-3 mins. Remove from the pot and set aside.

TIP: Watch them closely—they can burn easily.

Quarter the apple and remove the core and seeds. Cut the apple lengthways into thin slices. Halve the orange. Squeeze the juice from half the orange. Peel the rest with a knife and remove the segments.

Cut the Greek style cheese into 1cm cubes.

Add 1 tbsp oil, 1 tbsp orange juice, half the mustard and maple syrup to a salad bowl. Mix well to make your drizzle. Season to taste with salt and pepper.

Just before serving, add the salad leaves, diced cheese, orange segments, half the toasted hazelnuts and apple slices to the salad bowl. Mix well.

Divide the salad into plates. Roll the ham and place it on top.

Sprinkle with the remaining hazelnuts.
