Instructions

Bring a large pot of salted water to the boil.

Cook the orzo for 8-9 min, or until 'al dente', and drain the water.

Tear the smoked salmon into large pieces.

Cut the tomato into small cubes.

Rinse rocket.

Mix sun dried tomato paste and mayo in a large bowl. Season to taste with salt and pepper.

Add the orzo, arugula and tomatoes and toss together.

Arrange orzo salad in deep plates. 

Top with smoked salmon and serve.
