Cooking Steps

Get Prepped

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Drain the sweetcorn in a sieve.Trim the salad leaves, then thinly slice or tear into bite-sized pieces. Toss the salad leaves with a drizzle of oil and season with salt and pepper. 
  • Slice the brioche rolls down through the middle (but not all the way through). Butter the bread if you like. 
  • Pop onto a baking tray and into the oven to warm through, 2-3 mins. 

TIP: You can toast your bread in the toaster if you like. 

Prepare the Filling

  • To a bowl, add the tuna, dried chilli flakes (use less if you dont like the heat) and sweetcorn.
  • Mix well with aioli and season to taste with salt and pepper.
  • Divide the salad leaves and tuna mix between the brioche rolls.
  • Scatter over the crispy onions then sandwich closed. Serve any remaining salad by the side.

  • To serve, slice each sandwich in half widthways.
  • Divide between plates.
