Cooking Steps

  • Preheat your oven to 240°C/220°C fan/gas mark 9.
  • Chop the potatoes into 2cm chunks (peeling optional).
  • Pop onto a large (lined) baking tray.
  • Toss with salt, pepper, and a drizzle of oil. Spread out in a single layer.
  • When the oven is hot, roast on the top shelf until golden, 25-35 mins. Turn halfway through. When 10 mins of cooking time remain, sprinkle the sesame seeds over the potatoes.

TIP: Use two baking trays if necessary.

  • Meanwhile, lay the chicken on a separate lined baking tray.
  • Toss with Thai spice mix, salt, pepper and a drizzle of oil. IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle.
  • Roast the chicken in the oven until cooked through, 25-30 mins.

TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging used to keep it fresh.

  • When the chicken has been in the oven for 15 mins,  toss the broccolini with a drizzle of oil and season with salt and pepper.
  • Pop onto the tray alongside the chicken.
  • Spread the teriyaki sauce over the chicken.
  • Return to the oven for the remaining time, 10-15 mins.

  • Once cooked, cut the chicken widthways into 2cm thick slices, then divide between plates.
  • Spoon over any excess teriyaki sauce from the tray.
  • Serve with sesame potatoes and roasted broccolini alongside.
  • Finish with a drizzle of mayo.
