Roughly chop the parsley (stalks and all).
Cut the tomato into 1cm chunks.
Mix the tuna with the parsley, tomato and aioli. Season to taste with salt and pepper.
Spread some butter and some mustard (as much as you'd like) over one side of each bread slice. Divide the tuna filling between the base of each sandwich. Sprinkle the cheese on top and close the lid.
Place a large pan over medium heat with a knob of butter.
Once hot, add the toastie and cover with a lid.
Allow the bread to toast and the cheese to melt, pressing down occasionally with a spatula or heavy-bottomed pan, 3-5 mins each side, adding more butter to the pan as necessary.
Halve the tuna and cheese toasties and plate up.
