Instructions

Cook the Pasta

  • Boil a large pot of salted water for the linguine.
  • When boiling, add the linguine to the water and bring back to the boil.
  • Cook until softened, 12 mins.
  • Once cooked, drain in a colander and pop back in the pot, off the heat.
  • Drizzle with oil and stir through to prevent sticking.

TIP: If you’re in a hurry you can boil the water in your kettle.

Blend the Pesto

  • Meanwhile, halve the lemon.
  • Add the salad leaves, cheese, pine nuts and 100ml olive oil to a blender.
  • Season with 1 tsp salt and ½ tsp pepper.
  • Blend until smooth. Loosen to your desired consistency by adding a tsp of water at a time.
  • Season to taste with salt, pepper and a squeeze of lemon juice.
Finish and Serve

  • Toss the pesto with the pasta.
  • Divide the homemade pesto linguine between bowls.
