Difference Between Rump Steak and Sirloin Steak
Rump and sirloin are both different cuts of steak used in various meat recipes. However, the key differences between these two steak cuts are outlined here:
-
Taste
Rump steak has a stronger, more intense beefier taste. It is also chewier in texture than sirloin steak. Sirloin is milder and more tender, with a smooth texture and balanced flavour, though less intense than rump. Sirloin steak is usually richer, thanks to its distribution of fat marbling. -
Appearance
Rump steak is often thicker than sirloin, with a more coarse texture and visible grain. The shape of rump steak is slightly irregular and usually has a thicker fat cap on one side. Sirloin is smoother, with finer marbling throughout and a thinner layer of fat. -
Tenderness
Rump steak is generally firmer and more chewy than sirloin. This is because of where the cut is from on the cow. Sirloin, coming from the lower back, is more tender because the muscle has worked less, resulting in a smoother texture and bite.
