Here’s what you need to know to prepare turkey bolognese for four to six adults.
1. Heat a generous tablespoon of olive oil in a shallow, non-stick pan. Then, add a large chopped onion and a bay leaf. 2. Add a finely chopped stick of celery (optional) and 500g of turkey mince, stirring the ingredients together to prevent them from sticking to the bottom of the pan. 3. Work the mince with a spoon to help it break up and cook evenly. Use a low heat to prevent overcooking, but keep stirring until it is fully browned off on all sides. This will take about six to eight minutes, depending on the level of heat and the type of pan you own. 4. With the meat browned, add one tin of chopped tomatoes. You can use fresh, but tinned ones are fine, not to mention convenient. Mix in a tablespoon of tomato purée. 5. Increase the heat to bring the sauce to the boil, then drop it back to a simmer. 6. Bring a pan of water to the boil and add 500g of freeze-dried pasta, covering the pan with a lid. 7. While the pasta is cooking, continue to stir the sauce occasionally so that the bottom of the pan doesn’t dry. Season with oregano, basil, salt and pepper. 8. Drain the pasta, serve with the turkey bolognese sauce, and garnish with grated Italian hard cheese.
