Cooking steps

Get Prepped

  • Peel and grate the garlic (or use a garlic press).
  • Quarter the lemon. 
  • Drain and rinse the chickpeas in a sieve.
Blend the Hummus

  • In a blender, puree half the garlic, tahini, chickpeas, 1 tbsp oil (per 2P), 75ml water (per 2P) and ½ tsp salt (per 2P) until smooth. 
  • Add salt, pepper and lemon juice to taste. 

TIP: Add a splash of water to loosen the hummus if necessary. 

Chop the Veg

  • Trim the green beans.
  • Trim the carrot, then halve lengthways (no need to peel). Chop into roughly 1cm wide, 5cm long batons.
Fry the Beef

  • Place a large pan over high heat with a drizzle of oil.
  • Season the beef with paprika, salt and pepper.
  • Once the oil is hot, fry the beef until browned, 1-2 mins each side for medium-rare. Cook for another 1-2 mins on each side if you like it medium and a further 1-2 mins on each side if you want it well-done. IMPORTANT: Wash hands and equipment after handling raw meat and its packaging. Meat is safe to eat when the outside is browned. 
  • Remove from the pan and allow to rest.
Char the Veg

  • Return the pan to high heat with a drizzle of oil.
  • Add the carrot and green beans and fry for 5-6 mins.
  • Season with remaining garlic, salt and pepper. Add a splash of water, cover and cook until tender, 2-3 mins.
Dish Up

  • Arrange the beef slices between plates alongside the charred veg and your beautiful hummus.
  • Serve any remaining lemon wedges on the side.
