Instructions

Preheat your oven to 220°C/200°C fan/gas mark 7.

Chop the sweet potatoes into 1/2cm rounds (peeling optional). Cut the tomato into 1cm chunks. Peel and grate the garlic (or use a garlic press).

Pop the sweet potato onto a large (lined) baking tray. Drizzle with oil, season well with salt and pepper, then toss to coat. Spread out in a single layer. When the oven is hot, bake on the top shelf until golden, 30-35 mins. Turn halfway through. TIP: Use two baking trays if necessary.

2nd cook: at the beginning cut the ribs in 2, put them in separate oven dishes and try one with the sauce at the beginning and the other half-time

Remove all the packaging from the pork ribs and pop into an oven dish. Cover with aluminium foil and roast in the middle of the oven until warmed through, 25-30 mins.

Meanwhile, in a bowl, mix the sweet chilli sauce, maple syrup, garlic and 1/2 tsp salt (double for 4P).
 
After cooking the ribs for 15 mins, brush the sweet chilli and maple sauce all over them, turning them over.

Put back in the oven for the remaining time with the aluminium foil (15-20 mins).

In a salad bowl, mix 1 tbsp oil with the balsamic glaze. Season to taste with salt and pepper.

Just before serving, add the rocket and tomato to the salad bowl. Toss to combine.

When the ribs are ready, cut them into 2 pieces and divide them between plates (discard the cooking juices).

Add the sweet potatoes and salad alongside them.
