In a bowl, mix the pancake batter with the cinnamon and mix well.

You can choose to mix the chocolate chips in the pancake batter and then cook or use them separately to decorate Christmas designs.

Place a pan on medium-high heat with a knob of butter. Once hot, add 2 tbsp of batter to the pan until bubbles start to appear, then turn and cook for 1-2 mins. Repeat the process with two-thirds of the batter. Then use the rest of the pancake mix to make smaller pancakes with 1 tbsp batter each. 

Tip: You could also make other fun Christmas shapes with the pancake batter.

Arrange the bigger circles between plates. Place a small pancake in the middle of some of the larger pancakes to resemble a reindeer's face. Then make the eyes, nose and horns with half the chocolate chips. Design the ears with half the maple syrup (or drizzle it on top).

Place the smaller pancakes on top of the remaining larger pancakes to resemble a snowman. Decorate with remaining chocolate chips to make the eyes, buttons and scarf. Design the snowman hands with the remaining maple syrup (or drizzle it on top).
