Cooking Steps

Get Prepped

  • Slice the tomato into thin wedges.
  • Trim the cucumber, then quarter lengthways. Chop widthways into small pieces.
  • Toss the cucumber and tomato with the Amarillo chilli paste. Season to taste with salt and pepper. 
Fry the Beef

  • Season the beef with BBQ rub, salt and pepper.
  • Place a large pan over high heat with a drizzle of oil.
  • Once hot, fry the beef until browned, 1-2 mins each side for medium-rare.
  • Cook for another 1-2 mins on each side if you like it medium and a further 1-2 mins on each side if you want it well-done. IMPORTANT: Wash hands and equipment after handling raw meat and its packaging. Meat is safe to eat when outside is browned.
  • Remove from the pan and cover to keep warm.
Cook the Cauli Rice

  • Return the pan to medium-high heat with a drizzle of oil.
  • Once hot, add the cauliflower rice and cook until just soft, 3-4 mins.
  • Season well with salt and pepper. 
Finish and Serve

  • Thinly slice the beef widthways.
  • Once the rice is cooked, stir through the chipotle paste, BBQ sauce and knob of butter and gently mix. Season to taste with salt and pepper.
  • Divide the cauli rice between plates and top with the beef rump slices.
  • Serve the tomato and cucumber tossed in Amarillo chilli paste alongside.
