Cooking Steps

Boil the Rice

  • Rinse the rice to remove excess starch.
  • Pour 300ml cold salted water (per 2P) into a medium pot with a tight-fitting lid.
  • Stir in the rice and bring to the boil.
  • Once boiling, lower the heat to medium, cover, and cook for 10 mins.
  • Remove from the heat. Keep covered for 10 mins or until ready to serve (the rice will continue to cook in its own steam).
Char the Corn

  • Drain the sweetcorn in a sieve.
  • Place a large pan over high heat (no oil).
  • Once the pan is hot, add the sweetcorn and cook until charred, 5-6 mins. Adjust the heat if necessary. Stir only twice during this time—you want the sweetcorn to pick up some nice colour. Remove once cooked.
  • Meanwhile, halve the avocado and remove the pit. Use a tablespoon to scoop out the flesh into a bowl and thinly slice.
  • Roughly chop the tomato and toss with salt and pepper in a small bowl.
Fry the Mince

  • Return the pan to medium-high heat (no oil). 
  • Once the pan is hot, fry the mince with the Mexican spice mix until browned, 5-6 mins. Use a spoon to break it up as it cooks. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
Assemble at the Table

  • Divide the rice and Mexican spiced mince between bowls.
  • Serve the sour cream, grated cheese, sweetcorn, Amarillo paste, chopped tomato and avocado alongside.
  • Allow everyone to build their own bowl.
