Cooking Steps

Roast the Sweet Potato

  • Preheat the oven to 240°C/220°C fan/gas mark 9.
  • Chop the sweet potatoes into 2cm chunks (peeling optional).
  • Add the sweet potato chunks to a large (lined) baking tray.
  • Drizzle with oil, season with half the Central American spice then toss to coat.
  • Spread out in a single layer. When the oven is hot, roast on the top shelf until golden, 20-30 mins. Turn halfway through.

TIP: Use two baking trays if necessary.

Make the Skewers

  • Meanwhile, peel and grate the garlic (or use a garlic press).
  • In a large bowl, combine the Central American spice, garlic, breadcrumbs, 2 tbsp water (per 2P) and ¼ tsp salt (per 2P), then add the mince.
  • Season with pepper and mix together by hand. 
  • Shape into sausage shapes, 2 per person.
  • Flatten to make koftas and thread a skewer through each one. IMPORTANT: Wash hands and equipment after handling raw mince.
Bake the Koftas

  • Pop the koftas onto a large, lined baking tray.
  • When the oven is hot, bake on the top shelf until browned on the outside and cooked through, 14-16 mins. IMPORTANT: Koftas are cooked when no longer pink in the middle.
Flavour Time

  • Meanwhile, in a small bowl, combine the yoghurt and the amarillo paste. Season with salt and pepper and set aside. 
  • Chop the tomato into 2cm chunks.
Toss the Salad

  • Just before serving, add the tomatoes and salad leaves to a bowl with a drizzle of oil. 
  • Season with salt and pepper. Toss together to evenly coat. 

TIP: Don't add the leaves too early or they'll go soggy.

Divide and Serve

  • Divide the skewers and sweet potatoes between plates.
  • Dollop the chilli yoghurt next to the skewers and serve.
