Cooking Steps

Get Prepped

  • Peel and grate the ginger. Use a teaspoon to easily scrape away the peel.
  • Peel and grate the garlic (or use a garlic press).
  • Halve the bell pepper and discard the core and seeds. Chop into 1cm pieces.
  • Drain the sweetcorn in a sieve.
  • Roughly chop the coriander (stalks and all).
Fry the Chicken

  • Place a large pan over high heat with a drizzle of oil
  • Once hot, add the garlic, sweetcorn, bell pepper, chicken and Thai spice mix to the pan. Season with salt and pepper.
  • Fry until golden on the outside, 6-8 mins, stirring frequently. IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. 

TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging used to keep it fresh.

Stir in the Sauce

  • Add the rice and ginger and fry for another 3-4 mins.
  • Add the Szechuan paste and a splash of water. 
  • Mix well to combine. Season to taste with salt and pepper. IMPORTANT: Chicken is cooked when no longer pink in the middle. 
Divide and Serve

  • Divide your chicken fried rice between bowls.
  • Top with a sprinkling of coriander.
