Cooking Steps

Get Prepped

  • Halve, peel and thinly slice the onion.
  • Chop the tomato into 2cm chunks.
  • Trim the cucumber, then quarter lengthways. Chop widthways into small pieces.
  • Trim the baby gem, separate the leaves, then tear into bite-sized pieces.
  • Toss the onion, cucumber, tomatoes and baby gem together with a drizzle of oil. Season with salt and pepper.
Start Frying

  • Thinly slice the beef widthways.
  • Place a large pan over high heat with a drizzle of oil.
  • Once the pan is very hot, sear the beef until cooked through, shifting as they colour, 2-3 mins. IMPORTANT: Wash hands and equipment after handling raw meat and its packaging. Meat is safe to eat when the outside is browned.
  • Season with paprika, salt and pepper.
Warm the Sauce

  • Place a small pot over medium-high heat.
  • Once hot, add the vegan nduja and hollandaise sauce.
  • Stir until combined then cook until warm, 2-3 mins.
Divide and Serve

  • Once everything is cooked, divide the salad between bowls.
  • Top with the pan-fried beef.
  • Pour over the nduja hollandaise sauce.
