Cooking steps

Shape the Meatballs

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • In a large bowl, combine half the garlic, the lemongrass paste, breadcrumbs, honey, 1 tbsp water (per 2P) and ¼ tsp salt (per 2P), then add the mince.
  • Season with pepper and mix together by hand.
  • Roll into evenly-sized balls, 3-4 per person. IMPORTANT: Wash hands and equipment after handling raw mince.
Bake the Meatballs

  • Pop the meatballs onto a large (lined) baking tray.
  • When the oven is hot, bake on the top shelf until browned on the outside and cooked through, 12-15 mins. IMPORTANT: Meatballs are cooked when no longer pink in the middle.
Prep the Rest

  • Meanwhile, roughly chop the mushrooms.
  • Roughly chop the coriander (stalks and all).
  • peel and grate the garlic (or use a garlic press).
  • Toss the sweet Asian sauce and coleslaw in a bowl and mix. Season to taste with salt and pepper. 
Soften the Veg

  • Place a large pan over high heat (no oil).
  • Once pan is hot, add mushrooms and cook until charred, 3-4 mins, shifting occasionally as they cook.
  • Once the mushrooms are browned, add the remaining garlic and cook for 30 secs.
  • Remove from the heat and allow to cool slightly.
  • Once cooled, add to a blender with the cream cheese. Season with salt and pepper. Blitz until smooth.
Warm the Baguette

  • Pop the baguettes into the oven to warm through, 2-3 mins.
Assemble and Serve

  • When everything's ready, spread the mushroom pate over the cut sides of the baguette. 
  • Fill with a handful of slaw, the meatballs and a sprinkling of coriander. 
  • Sandwich on the baguette lids, slice in half widthways and share between your plates.
  • Add the salad leaves and remaining coriander to the bowl with the coleslaw. Add a drizzle of oil, then toss to coat. Season to taste with salt and pepper. Serve alongside your banh mi.
