Cooking Steps

Cook the Coconut Rice
1
  • Rinse the rice to remove excess starch.
  • Boil a large pot of salted water for the rice. If you’re in a hurry you can boil the water in your kettle.
  • Add the rice and cook for 12-15 mins.
  • Drain in a sieve and pop back in the pot. Cover with a lid and leave to the side until ready to serve.
  • Just before serving, stir through one-third of the coconut milk.
Time to Fry
2
  • Halve, peel and chop the onion into small pieces.
  • Place a pan over medium-high heat (no oil).
  • Once the pan is hot, fry the mince, onion and cumin until browned, 5-6 mins. Use a spoon to break it up as it cooks.
  • Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
Simmer the Sauce
3
  • Add the bulgogi sauce, peas and two-thirds of the coconut milk.
  • Simmer until warmed through, 2-3 mins. Add a splash of water to loosen the sauce if necessary.
  • Season to taste with salt and pepper.
Divide and Serve
4
  • Divide the coconut rice between bowls and top with the bulgogi mince.
  • Scatter the crispy onions over the top.
