Cooking steps

Bake the Baguette

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Cut the baguette widthways at an angle into 2cm slices.
  • Lay the bread slices onto a baking tray.
  • Drizzle with oil and season with salt and pepper.
  • Toast until golden brown, 8-10 mins.
Top the Crostini

  • Once cooked, top half of the baguette the slices with blue cheese.
  • Drizzle over the cranberry chutney.
Finishing Touches

  • Drain and tear mozzarella and place over the remaining crostini slices. 
  • Tear the smoked salmon into pieces and place on top of the mozzarella.
Dish Up

  • Season the crostini lightly with salt and pepper.
  • Serve the crostini on platters. Crumble chunks of goat's cheese over the top.
  • To finish, drizzle the balsamic glaze over the top.
