Cooking Steps

Cook the Prawns

  • Preheat the oven (for the ciabatta) to 220°C/200°C fan/gas mark 7.
  • Place a pan over medium-high heat with a drizzle of oil and a knob of butter.
  • Once hot, fry the prawns until cooked through, 4-5 mins. IMPORTANT: Wash hands and equipment after handling raw prawns. Prawns are cooked when pink on the outside and opaque in the middle.
  • Remove from the heat, add the vinegar and allow to evaporate.

TIP: You can also toast the ciabatta in the toaster.

Prep the Veg

  • Meanwhile, halve the avocado, remove the pit and scoop out the flesh with a spoon, then cut it into thin slices.
  • Halve the ciabatta lengthways. Pop into the oven, cut-side up, to warm through, 2-3 mins.

  • Toss the salad leaves with the avocado, prawns and pesto in a bowl.
  • Mix well, season to taste with salt and pepper.
  • Divide between bowls and serve with warm ciabatta alongside. 

TIP: Ensure the prawns have cooled before tossing with the salad.
