Preheat the oven to 180°C.
Heat a light drizzle of oil in a deep frying pan over medium-high heat. Fry the chicken 3 - 4 minutes, covered. Add the Mexican-style spices and fry for 1 - 2 more minutes.
Wrap the tortillas in aluminium foil and keep warm in the oven until serving.
Dice the tomato & slice cucumber
Assemble the tortillas by adding chicken, tomato, cucumber, mayo and cheese.
