Cooking steps

Get Prepped

  • Trim the carrot and halve lengthways (no need to peel). Slice into ½ cm thick semi-circles.
  • Peel and grate the garlic (or use a garlic press).
  • Trim and thinly slice half the scallions (per 2P).
  • Halve the chilli and discard the core and seeds. Finely slice (use less if you don't like spice).
  • Remove the plastic packaging from the pudding and discard. Chop into 2cm chunks.
Start Frying

  • Place a large pan over medium-high heat with a drizzle of oil.
  • Add the carrot and fry until tender, 5-6 mins.
  • Add the pudding and fry for another 3-4 mins, breaking it up with a spoon as it cooks.
  • Stir in the garlic and Thai spice and cook until fragrant 1-2 mins.
Add the Rice

  • Add the rice, peas and soy sauce to the pan and heat through, 2-3 mins.
  • Once cooked, stir through the scallion.
Finish and Serve

  • Divide the fried rice between bowls.
  • Top with the sliced chilli and peanuts.
  • Drizzle the gochujang over the top.
