What are scallions, you may ask, though? It’s a reasonable enough question, given they go by other names. What’s important to note is that scallions are the same as green onions and spring onions.

Therefore, whenever you see scallions mentioned in a recipe, you can substitute them for spring or green onions. In some cases, people refer to green onions and scallions as being bigger than spring onions, which are sometimes more tender. However, this is by no means universal, and they are essentially the same thing. Like white onions, red onions, shallots, leeks and garlic bulbs, they all belong to the same allium family.

Check out some of the most popular recipes around for vegetarian meal options, some of which include scallions, if you want to learn how to cook with them. That being said, the basic steps you need to follow to prepare spring onions are as follows:

Step 1: Wash your scallions in clean water and then lay them down sideways on a chopping board so that the white bulbs are all at one end and the green stems are at the other.

Step 2: Using a paring or vegetable knife, carefully remove the very bottom end of the bulb so that any roots that remain can be disposed of without being used in your dish.

Step 3: Older green onions may have some outer parts of the stem that are damaged or tough. Simply pull these away by hand if this is the case.

Step 4: Most recipes will call for you to chop your scallions. Get into the habit of doing this from the bulb end first with diagonal cuts to maximise the surface area of each piece. These are ideal for adding to the flavour of sauces, soups and stews, for example.

Step 5: As you progress from the bulb end to the leafier green end, where the spring onions are less dense, you can increase the size of each piece to maintain the strength of flavour per piece.

With this method, you can then fry your scallion pieces, add them to a sauce or eat them raw by using them as garnish on top of your dish.
