Cooking steps

Prep the Veg

  • Trim the carrot and halve lengthways (no need to peel). Slice into ½ cm thick semi-circles.
  • Halve the pepper and discard the core and seeds. Chop into 2cm chunks.
Time to Fry

  • Place a large pan over high heat with a drizzle of oil.
  • Add the carrot and bell pepper and fry until tender, 5-6 mins. Add  a splash of water and cover and cook for another 4-5 mins.
  • Gently separate the noodles by hand.
  • Stir through the sweet Asian sauce and noodles. Mix well and add another splash of water to loosen the sauce if needed.
  • Season to taste with salt and pepper
Divide and Serve

  • Divide the noodles between bowls.
