Cooking steps

Get Prepped

  • Trim the carrot, then coarsely grate (no need to peel).
  • Halve, peel and chop the onion into small pieces.
  • Place a large pot over medium-high heat with a generous amount of oil.
Soften the Veg

  • Add the chorizo, onion and carrot to the pot, cover with a lid and cook for 3-5 mins.
  • Add the tomato paste and cook for another 1-2 mins. 
  • Add the spinach, stock, chopped tomatoes and garlic herb mix to the pot with 300ml water (per 2P).
  • Simmer, covered, for 2-3 mins. Season to taste with salt and pepper.
Add the Lasagne Sheets

  • Break half the lasagne sheets (use all for 2P and 4P) into small pieces.
  • Add to the pot and simmer for 2-4 mins.
  • Add the creme fraiche along with another splash of water if you feel it's too thick. 
  • Season to taste with salt and pepper. 
Dish Up

  • Divide the lasagne soup between two bowls.
  • Tear the mozzarella into chunks and divide between bowls.
