  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • In a bowl, whisk 1 egg, 100ml milk, 2 tsp sugar and half the cinnamon.
  • Lay the bacon in a single layer on a lined baking tray.
  • Bake on the top shelf of your oven until golden brown and crispy, 10-15 mins. IMPORTANT: Wash hands and equipment after handling raw meat. Cook bacon thoroughly.

  • Place a large pan over medium heat with 1 tbsp butter
  • Dip the brioche buns in the egg and milk mixture.
  • Fry on each side until lightly browned, 7-8 mins. Use a spatula to press down while in the pan.

  • Arrange the French toast on plates.
  • Top with bacon strips and drizzle over the maple syrup.
  • Scatter the blueberries over the top.
