Cooking steps

Prep the Pear

  • Quarter and core the pear.
  • Spread half the balsamic glaze over the top.
  • Place a pan over a high heat with a drizzle of oil.
  • Add the pear and fry until caramelised and charred, 2-3 mins each side.
  • In a large bowl, mix the pesto with a good drizzle of oil.
Assemble the Dressing

  • Toss the salad leaves in the bowl with the pesto.
  • Season to taste with salt and pepper
Toss and Serve

  • Divide the dressed salad leaves between plates.
  • Top with the balsamic pear.
  • Drain the mozzarella and tear over the top.
  • Garnish with the remaining balsamic glaze.
