Cooking Steps

Roast the Duck

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Remove the confit duck legs from their packaging.
  • Place onto a lined baking tray, skin-side up, and season with salt and pepper. 
  • When the oven is hot, roast on the top shelf for 25-30 mins. IMPORTANT: Ensure the duck is piping hot throughout.
  • Meanwhile, peel and grate the garlic (or use a garlic press).
Boil the Rice

  • Rinse the rice to remove excess starch. Place a pot over medium-high heat with a drizzle 1 tbsp butter (per 2P).
  • When hot, add the garlic and fry for 1 min.
  • Stir in the rice with some salt, 300ml cold water (per 2P)and bring to the boil.
  • Once boiling, lower the heat to medium and cover with the lid.
  • Leave to cook for 12 mins, then remove the pot from the heat (still covered) and leave to the side for another 12 mins or until ready to serve (the rice will continue to cook in its own steam).
Prep the Veg

  • Meanwhile, trim the cucumber, then pop onto a board and use a rolling pin to gently bash it a few times until splits. Cut into roughly 2cm chunks.
  • Trim and peel the carrot. Use the peeler to peel long ribbons down the length of the carrot, stopping at the core.
Pickle the Veg

  • In a medium bowl, combine the apple cider vinegar and 1 tsp sugar (per 2P).
  • Season with salt and pepper, then add the cucumber and carrot.
  • Mix together well, then set aside.
Make the Satay Sauce

  • When the duck has 5 mins of cooking time remaining, place a pan over medium-high heat.
  • Fry the prawns until cooked, 4-5 mins. IMPORTANT: Wash hands and equipment after handling raw prawns. Prawns are cooked when pink on the outside and opaque in the middle.
  • Add the sweet chilli sauce, soy sauce and 125ml water (per 2P) to the pan.
  • Bring to the boil, then reduce the heat and simmer. While simmering, mix in the peanut butter until combined and smooth.
  • Once combined, simmer until the sauce has thickened, 1 min. Taste and season with salt and pepper if needed.
Dish Up

  • When everything's ready, share the garlic butter rice between bowls.
  • Top the rice with the roast duck and spoon over the prawns and satay sauce.
  • Arrange the cucumber and carrot pickle alongside.
