Cooking steps

Cook the Pasta

  • Boil a large pot of salted water for the rigatoni.
  • When boiling, add the rigatoni to the water and bring back to the boil.
  • Cook until softened, 10-12 mins.
  • Once cooked, reserve a cup of cooking water then drain in a colander and pop back in the pot, off the heat. 
Prep the Veg

  • Halve the cherry tomatoes.
  • Roughly chop the olives.
  • Place a pan over medium-high heat with a drizzle of oil.
    Once hot, fry the turkey mince until cooked, 1-2 mins. Use a spoon to break it up as it cooks. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. 
Sauce it Up

Add the cherry tomatoes to the pan and cook for another 4-5 mins, until the tomatoes are softened. Pop in the olives, half the cheese, creme fraiche, a splash of pasta water and to bring to a boil. Simmer for 2-3 mins. Add some more pasta water if required to loosen the sauce. Season to taste with salt, pepper and sugar. 

IMPORTANT: Mince is cooked when no longer pink in the middle.

Divide the turkey and cherry tomato pasta between bowls and scatter over the remaining cheese.
