Cooking steps

Cook the Orzo

  • Boil a large pot of salted water
  • When boiling, add the orzo to the water and bring back to the boil. Cook until softened, 10-12 mins.
  • Meanwhile, roughly chop the olives and tomatoes.
  • Once cooked, drain the orzo and pop back in the pot.
  • Drizzle with oil then stir through the sun dried tomato paste, cheese, cream cheese, olives and tomatoes. Mix well and season to taste with salt and pepper.

TIP: If you’re in a hurry you can boil the water in your kettle.

Cook the Chicken

  • Place your hand flat on top of the chicken breast and slice through to make two thin steaks. IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle.
  • Place a pan over medium-high heat with a drizzle of oil
  • When hot, add the chicken and bacon. Season with half a sachet of Italian herbs (per 2P), salt and pepper.
  • Cook through, 3-6 mins each side. Cook bacon thoroughly.

TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging used to keep it fresh.

Assemble the Salad

  • Just before serving, toss the salad leaves with mayo and a drizzle of oil
  • Season to taste with salt and pepper.
Dish Up

  • Divide the sun dried tomato orzo between plates.
  • Serve the chicken steaks and tossed salad alongside.
