Cooking steps

Preheat your oven to 240°C/220°C fan/gas mark 9.

Chop the sweet potatoes lengthways into 1cm slices, then chop into 1cm wide fries (peeling optional). Halve, peel and thinly slice the onion. Trim the cucumber then slice widthways.

Pop the Fries onto a large (lined) baking tray. Drizzle with oil, season with salt and pepper then toss to coat. Spread out in a single layer. You want them well spaced out to achieve a crispy finish. When the oven is hot, roast on the top shelf until golden, 20-25 mins. Turn halfway through. TIP: Use two baking trays if necessary.

In a bowl, toss the sliced cucumber with ¼ tsp salt, red wine vinegar and 1 tsp sugar (per 2P).
Set aside and continue stirring occasionally.

Roll into even-sized balls, then shape into 1cm thick burgers, 1 per person. Season with salt and pepper. Toss the sliced onions with the paprika and a drizzle of oil. 

Place a large pan over medium-high heat with a drizzle of oil.

Once the oil is hot, lay the onions in the pan then add the burgers on top of the onions. Place some parchment paper on top of the burgers and smash with a spatula or the bottom of a pot till thin, remove the paper and fry until browned on the outside and cooked through, 12-14 mins in total.

IMPORTANT: The burgers are cooked when no longer pink in the middle.When the burgers are cooked, remove the pan from the heat. Carefully place the cheese on top of the burgers. Cover with a lid (or foil), then set aside, off the heat, to allow the cheese to melt, 3-4 mins.

Pop the buns into the oven to warm, 2-3 mins.

Spread the ranch on both sides of the buns then top the buns with the smash burgers and pickled cucumber. Serve alongside with the sweet potato fries and and remaining ranch.
