Cooking steps

Get Prepped

  • Preheat your oven to 220°C/200°C fan/gas mark 7.
  • Remove the pit from the avo. Scoop out the flesh. Mash with a fork.
  • Quarter the lemon. Season the avo with salt, pepper and a squeeze of lemon juice.
  • Chop the cheese into thin slices.
  • Place a pan (preferably non-stick) over medium-high heat with a drizzle of oil. Once hot, fry the cheese until golden, 2-3 mins each side. Remove from pan once cooked.

TIP: For an optional egg, fry until the white is cooked and the yolk is your desired firmness, 4-5 mins.

Cook the Pancakes

  • Mix the sugar and cinnamon in a bowl.
  • Return the pan to a medium-high heat with a knob of butter.
  • Once hot, add 2 tbsp of batter to the pan.
  • Cook until bubbles start to appear on the surface, then turn and cook for another 1-2 mins. Repeat until no batter remains.
  • Pop the buns into the oven to warm through, 2-3 mins.
Assemble and Serve

  • Spread the Ballymaloe relish evenly over each bun base.
  • Top with the avo and cheese slices
  • If you've made one, add your optional egg. Sandwich closed with the bun lid.
  • Serve the pancakes alongside with a sprinkle of cinnamon sugar and a squeeze of lemon juice.
