Cooking Steps

Get Prepped

  • Halve, peel and thinly slice the onion.
  • Chop the tomato into 2cm chunks.
  • Trim the cucumber, then quarter lengthways. Chop widthways into small pieces.
  • Trim the baby gem, separate the leaves, then tear into bite-sized pieces.
  • Toss the onion, cucumber, tomatoes and baby gem together with a drizzle of oil. Season with salt and pepper.
Start Frying

  • Place your hand on top of the chicken and slice through horizontally to make thin steaks.
  • Place a large pan over medium-high heat with a drizzle of oil. 
  • When hot, add the chicken and season with paprika, salt and pepper.
  • Cook through, 3-6 mins each side (cook in batches if your pan is getting crowded). IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle.
  • Add the chorizo for the final 3-5 mins.

TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh.

Warm the Sauce

  • Place a small pot over medium-high heat.
  • Once hot, add the vegan nduja and hollandaise sauce.
  • Stir until combined then cook until warm, 2-3 mins.
Divide and Serve

  • Once everything is cooked, divide the salad between bowls.
  • Top with the pan-fried chicken.
  • Pour over the nduja hollandaise sauce.
