Cooking Steps

Get Prepped

  • Preheat oven to 240°C/220°C fan/gas mark 9.
  • Halve, peel and thinly slice onion. Trim and thinly slice radish.
  • Trim the cucumber then halve lengthways. Thinly slice widthways.
  • Pop radish and cucumber into a small bowl along with apple cider vinegar, 1 tsp sugar (per 2P) and ¼ tsp salt (per 2P).
  • Mix together and set aside, keep stirring frequently.
Roast the Potatoes

  • Halve potatoes lengthways, quartering any larger pieces, and pop them onto a lined baking tray.
  • Drizzle with oil and season with paprika, salt and pepper.
  • Rub oil over potatoes then lay them cut-side down on baking tray.
  • Roast on top shelf of oven until fork-tender, 25-35 mins.
Start Frying

  • Place a pan over medium-high heat with a drizzle of oil.
  • Once hot, fry the turkey until browned, 5-8 mins each side.
  • Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw turkey and its packaging. Turkey is cooked when no longer pink in the middle.
Make the Sauce

  • Meanwhile, place a large pan over medium-high heat with a drizzle of oil.
  • Once hot, add onion and thyme, season with salt and pepper and fry until soft and sweet, 8-10 mins, stirring occasionally.
Finishing Touches

  • Add demi-glace, half the mustard and a splash of water to pan with the onion.
  • Allow to heat through for 2-3 mins.
  • Season to taste with salt and pepper.
Divide and Serve

  • Divide potatoes and cucumber between plates.
  • Serve turkey alongside.
  • To finish, spoon over sauce.
