Cooking steps

Prep the Veg

  • Trim the cucumber and chop into thirds. 
  • Chop the tomatoes into 2cm chunks.
  • Pop the cucumber and tomato into a bowl and season to taste with salt and pepper.
  • Cut the Greek style cheese into 2cm cubes.
  • Take half the skewers and halve widthways with the help of a scissors.
Assemble the Skewers

  • Thread olives, tomatoes, Greek style cheese and cucumber pieces onto each skewer.
  • Repeat until you've used all your skewers and all your veg.
Dish Up

  • Serve the skewers on platters.
  • Finish with a drizzle of pesto and balsamic glaze.
