Cooking steps

Fry the Chicken

  • Place a pan over medium-high heat with a drizzle of oil.
  • Place your hand on the chicken and slice through to make two thin steaks. Season with half the Mexican spice, salt and pepper.
  • Place a large pan over medium-high heat with a drizzle of oil.
  • When hot, add the chicken steaks and season with salt and pepper. Cook through, 3-6 mins each side. IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle. 
Prep the Veg

  • Halve the pepper and discard the core and seeds. Chop into 2cm chunks.
  • Halve, peel and thinly slice the onion.
  • Cut the tomato into 2cm chunks.
Warm the Cauli Rice

  • Place a pot over high heat with a drizzle of oil.
  • Fry the tomato, bell pepper and onion with the remaining Mexican spice mix, 4-5 mins.
  • Add the cauliflower rice and mix well. Stir fry for another 2-3 mins.
  • Season to taste with salt and pepper. 
Divide and Serve

  • Divide the cauli rice between plates.
  • Top with the fried chicken.
  • Drizzle the ranch sauce over the top.
