Cooking steps

Boil the Pasta

  • Boil a large pot of salted water for the linguine.
  • When boiling, add the linguine to the water and bring back to the boil.
  • Cook until softened, 10-12 mins.
  • Once cooked, drain in a colander and pop back in the pot, off the heat.
  • Drizzle with oil and stir through to prevent sticking.

TIP: If you’re in a hurry you can boil the water in your kettle.

Time to Fry

  • Halve, peel and chop the onion into small pieces.
  • Drain the sweetcorn.
  • Trim the carrot, then coarsely grate (no need to peel).
  • Place a pan over medium-high heat (no oil). 
  • Once hot, fry the mince with the onion, peri peri spice, sweetcorn and carrot until browned, 5-6 mins. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle. Use a spoon to break it up as it cooks.
Simmer the Sauce

  • Pop in the chopped tomatoes and a pinch of sugar.
  • Cover and cook for 5-8 mins.
  • Stir through the cooked pasta and mix well.
  • Add a splash of water to loosen the sauce if required. Season to taste with salt, pepper and sugar
Finish and Serve

  • Divide pasta between plates.
  • Sprinkle the cheese over the top.
