Cooking steps

Fry the Mince

  • Trim the carrot, then quarter lengthways (no need to peel). Chop widthways into small pieces.
  • Place a pan over medium-high heat (no oil).
  • Once the pan is hot, fry the mince with the chilli flakes and carrot until browned, 5-6 mins. Use a spoon to break it up as it cooks. Season to taste with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
Add the Pineapple

  • Add the pineapple and sweet Asian sauce to the pan. Cook for 2-3 mins. Season to taste with salt and pepper.
  • Meanwhile, trim and finely slice the scallion.
Add the Rice

  • Add the rice to the pan and mix through.
  • Allow to heat fully approx 2-3 mins.
Divide and Serve

  • Divide the fried rice between plates.
  • Ssprinkle over the sliced scallion and drizzle over the szechuan paste.
  • Season to taste with salt and pepper.
