Cooking Steps

Roast the Potatoes

  • Preheat the oven to 240°C/220°C fan/gas mark 9.
  • Halve the potatoes. Quarter any larger pieces.
  • Pop onto a lined baking tray. Drizzle with oil, season with half the Mexican spice, then toss to coat. Spread out in a single layer, cut-side down. Roast on the top shelf of the oven, 15-20 mins.
  • After 20 mins, remove from the oven. Lightly crush the potatoes with the bottom of a pot.
  • Drizzle with more oil and return to the top shelf until crispy and golden, 10-15 mins.
Get Prepped

  • Meanwhile, soak the skewers in cold water to prevent them from burning.
  • Halve the chilli and discard the core and seeds. Finely chop.
  • Peel and grate the garlic (or use a garlic press). Remove the stems from the padron peppers.
  • Cut the tomato into 2cm chunks. Trim the cucumber, then quarter lengthways. Chop widthways into small pieces.
Make the Marinade

  • In a large bowl, mix the remaining Mexican spice, garlic, honey and chilli (use less if you don't like spice) with a drizzle of oil.
  • Season to taste with pepper. 
Start the Skewers

  • Add the prawns and padron peppers to the marinade and toss to coat. IMPORTANT: Wash your hands and equipment after handling raw prawns. Prawns are cooked when pink on the outside and opaque in the middle.
  • Thread the prawns and peppers onto the skewers (2 per person), alternating between the two.
Roast the Skewers

  • Transfer the prawn skewers to a lined baking tray.
  • Pop in the top of the oven, until cooked through, 12-15 mins. Turn the tray halfway through.
Divide and Serve

  • Toss the cucumber, tomato and salad leaves with a drizzle of oil and the balsamic glaze.
  • Divide the skewers, smashed potatoes and salad between plates.
