Cooking steps

Fry the Bacon Lardons

  • Place a pan over high heat with a drizzle of oil.
  • Once the oil is hot, fry the bacon lardons until golden, 3-5 mins, stirring regularly. IMPORTANT: Wash hands and equipment after handling raw meat. Cook lardons thoroughly.
Get Prepped

  • While the lardons are frying, chop the tomatoes into 2cm chunks.
  • Trim the cucumber and quarter lengthways. Chop widthways into 2cm chunks.
  • Halve the avocado and remove the pit. Use a tablespoon to scoop out the flesh then thinly slice.
  • Trim and roughly chop the salad leaves.
Assemble the Salad

  • In a large bowl, toss the lardonspineapplesalad leaves, tomatoes, cucumber, avocado and cheese together with the dressing.
  • Season to taste with salt and pepper.
Divide and Serve

  • Divide the salad between bowls.
  • Sprinkle the crispy onions over the top.
