Cooking Steps

Get Prepped

  • Preheat the oven to 220°C/200°C fan/gas mark 7 (to avoid turning on the oven, dry-fry the tortillas in a pan instead).
  • Halve, peel and thinly slice the onion.
Sauce it Up

  • Place a large pan over medium-high heat with a drizzle of oil.
  • Once hot, add the prawns and onion and season with Thai spice, salt and pepper. 
  • Fry until cooked through, 4-5 mins. IMPORTANT: Wash your hands and equipment after handling raw prawns. Prawns are cooked when pink on the outside and opaque in the middle.
  • Once cooked, add the hoisin sauce, a knob of butter and a splash of water to the pan. Season to taste with salt and pepper. 
Marinate the Cucumber

  • While the prawns cook, trim the cucumber, then halve lengthways. Chop into roughly 1 cm-wide, 5 cm-long batons. 
  • Add the cucumbers and sweet Asian sauce to a bowl. Season to taste with salt and pepper then leave aside to marinate.
Prepare the Coleslaw

  • Toss the coleslaw together with the aioli and sriracha (add less if you'd like things milder). 
  • Season to taste with salt and pepper. 
Warm the Tortillas

  • Pop the tortillas into the oven to warm, 1-2 mins.
Plate at the Table

  • Serve the warm tortillas, sriracha slaw, hoisin prawns and marinated cucumber separately.
  • Allow everyone to assemble their own at the table.
