Cooking steps

Prep the Veg

  • Halve the cherry tomatoes.
  • Pop the tomatoes into a bowl and season to taste with salt and pepper.
  • Drain and cut the mozzarella into 2cm chunks. 
  • Take half the skewers and halve widthways using scissors.
Assemble the Skewers

  • Thread tomatoes, olives and mozzarella pieces onto each skewer, to resemble pokeballs.
  • Repeat until you've used all your skewers and all your veg.

TIP: Kids can assemble the Poké Ball Skewers

  • Serve the skewers on platters.
  • Finish with a drizzle of pesto and balsamic glaze.
