Cooking steps

Boil the Orzo

  • Boil a large pot of salted water for the orzo.
  • When boiling, add the orzo to the water and bring back to the boil.
  • Cook until softened, 10-12 mins. Once cooked, drain in a sieve and pop back in the pot.
  • Drizzle with oil and stir through to prevent sticking.

TIP: If you’re in a hurry you can boil the water in your kettle.

Fry the Prawns

  • Place a large pan over medium-high heat with a drizzle of oil.
  • Once hot, add the prawns and paprika and season with salt and pepper.
  • Fry until cooked through, 4-5 mins. IMPORTANT: Wash your hands and equipment after handling raw prawns. Prawns are cooked when pink on the outside and opaque in the middle.
Prep the Veg

  • Trim the cucumber, quarter lengthways and roughly chop widthways.
  • Roughly chop the olives and tomatoes.
  • Once everything is ready, toss the orzo with olives, prawns, tomatoes and sweet chilli sauce.
  • Season to taste with salt and pepper.
  • Toss the salad leaves and cucumber with a drizzle of oil, salt and pepper. 
Dish Up

  • Divide the orzo and prawns between bowls.
  • Crumble over the Cashel Blue® cheese.
  •  Serve the salad alongside.
