Cooking steps

Bake the Goat's Cheese

  • Preheat oven to 220°C/200°C fan/gas mark 7.
  • Place the goat's cheese on a lined baking tray. 
  • In a small bowl, mix the Italian herbs with a good glug of oil.
  • Pour the herby oil over the goat's cheese and bake in the oven until starting to melt, 5-6 mins.

  • Meanwhile, chop the tomato into 2cm chunks.
  • Trim the salad leaves, quarter lengthways and roughly chop widthways.
  • Toss the salad leaves and tomato with a drizzle of oil and the balsamic vinegar. Season to taste with salt and pepper.
Garnish and Serve

  • Divide your dressed salad between bowls.
  • Top with the warmed goat's cheese.
  • Tear over small pieces of smoked salmon to finish.
