Cooking Steps

Get Prepped

  • Halve, peel and thinly slice the onion.
  • Chop the tomato into 2cm chunks.
  • Trim the cucumber, then quarter lengthways. Chop widthways into small pieces.
  • Trim the baby gem, separate the leaves, then tear into bite-sized pieces.
  • Toss the onion, cucumber, tomatoes and baby gem together with a drizzle of oil. Season with salt and pepper.
Start Frying

  • Place a pan over high heat with a drizzle of oil.
  • Pat the salmon dry with kitchen paper. Season with paprika, salt and pepper.
  • Once hot, add the salmon fillets, skin-side down. Cook for 4-5 mins, turn over, and cook for 3-4 mins on the other side. IMPORTANT: Wash hands and equipment after handling raw fish. Fish is cooked when opaque in the centre.
Warm the Sauce

  • Place a small pot over medium-high heat.
  • Once hot, add the vegan nduja and hollandaise sauce.
  • Stir until combined then cook until warm, 2-3 mins.
Divide and Serve

  • Once everything is cooked, divide the salad between bowls.
  • Top with the pan-fried salmon.
  • Pour over the nduja hollandaise sauce.
