  • Rinse the rice to remove excess starch. Boil a large pot of salted water for the rice.
  • Add the rice and cook for 10-12 mins. Drain in a sieve and rinse with cold water to cool.
  • Meanwhile, halve, peel and thinly slice the onion. Quarter the lemon
  • Peel and grate the garlic (or use a garlic press).
  • Chop the tomato into 2cm chunks.
Time to Fry

  • Place a pan over medium-high heat (no oil). 
  • Once the pan is hot, fry the mince, garlic, onion and Mexican spice mix until the mince is browned, 5-6 mins. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
  • Use a spoon to break it up as it cooks.
Finishing Touches

  • Deglaze the mince with soy sauce and a squeeze of lemon juice.
  • Add the cheese, mix again and let it cool in the pan. 
  • Once the rice is cooled, toss with the salad leaves, tomatoes and sesame oil.
  • Season to taste with salt, pepper and lemon juice. 
Serve and Enjoy

  • Divide the rice salad between plates.
  • Top with mince mixture.
