Cooking steps

Cook  the Orzo

  • Boil a large pot of water for the orzo.
  • When boiling, add the orzo to the water and bring back to the boil.
  • Cook until softened, 10-12 mins.
  • Once cooked, drain in a sieve and rinse with cold water to cool down the orzo.
  • Return to the pot, off the heat. Drizzle with oil and stir through to prevent sticking.

TIP: If you’re in a hurry you can boil the water in your kettle. 

Prep the Veg

  • Meanwhile, halve the cherry tomatoes.
  • Trim and cut the cucumber into 2cm chunks.
  • Place your hand flat on top of the chicken and slice through horizontally to make two thin steaks.
  • Place a pan over medium-high heat with a drizzle of oil.
  • When hot, add the chicken and season with salt and pepper. Cook through, 3-6 mins each side. IMPORTANT: Wash hands and equipment after handling raw chicken and its packaging. Chicken is cooked when no longer pink in the middle. 
Toss the Salad

  • In a large bowl, loosen the sun dried tomato paste with a glug of oil
  • Toss the cooled orzo, cucumber, tomatoes, oregano and salad leaves with the loosened sun dried tomato paste.
  • Season to taste with paprika, salt and pepper.
Finish and Serve

  • Divide the orzo salad between bowls.
  • Tear the mozzarella over the salad. Place the chicken on top.
  • Crack some pepper on top and scatter over the cheese.
  • Finish with a drizzle of balsamic glaze
