  1. Trim and clean: Chop off tough bottoms and stems, remove any damaged outer leaves, and rinse well to ensure the Brussels sprouts are clean and free from bitterness. Scoring the bottom of your sprout with a sharp knife can ensure that they cook thoroughly but retain some bite. You may have to halve or quarter large sprouts for even cooking.

  2. Season: Toss with olive oil and a dash of salt and pepper to enhance the flavour and help create a crispy, caramelised outer.

  1. Preheat your oven to 220°C/200°C fan/gas mark 7. Trim and prepare the Brussels sprouts as described above.

  2. Pop the sprouts onto a baking tray and drizzle with oil. Season with salt and pepper, then toss to coat.

  3. When the oven is hot, roast on the top shelf until browned and tender, 18-20 mins, turning halfway through.
