Cooking Steps

Trim the green beans and cut in half.

Place a pan over medium-high heat (no oil). Once the pan is hot, fry the mince, coleslaw mix and beans until the mince is browned, 5-6 mins. Use a spoon to break it up as it cooks. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.

Add the lemongrass, garlic, ginger paste, miso paste, and soy sauce to the mince and fry for another 2-3 mins till fragrant.

Add the cauliflower rice to the pan and cook until just soft, 3-4 mins. Season well with salt and pepper.

Divide the stir-fry between two bowls and top with the crispy onions.
